Vieilles Vignes
Vieilles Vignes is the historical cuvee of the domain, and a signature cuvee of the Pouilly Fumé. Freshness, tension and minerality characterize this blend from our oldest plots (on average 35 years old), and favorite terroirs of Sauvignon Blanc.
Grape variety: 100 % Sauvignon Blanc
Age of the vines: on average 35 years old
Plots: Les Porcheronnes, Les Bascoins, La Côte des prés
Terroirs: Terres Blanches, Clay and limestone
Vine culture: Respectful of biodiversity and soils methods. Disbudding. Leaf removal according to the years.
Vinification: Direct pressing of the grapes, in a pneumatic press, at low pressure. Thermoregulated stainless steel tanks, vinification between 14°C (57°F) and 20°C (68°F) to preserve the aromatic potential.
Aging: No malolactic fermentation to keep the freshness. 8 months on fine lees minimum. Batonnage.
Degree of alcohol : 12,5

A Sauvignon blanc in the pure tradition, freshness, white flowers and minerality, with a long-lasting finish.
Our advices
Pour not chilled but fresh, around 10°C – 50°F.
We advise you to drink it 3 to 5 years after its bottling, to appreciate the freshness of its youth.
