Désert comes from the terroir “Désert des Fouinelles”, according to the elders, nothing took roots except… vines! This soil, full of little oyster fossils, was formerly covered by the see, 150 million years ago (Jurassic era), brings minerality and vivacity to the Sauvignon Blanc. From the sea to the desert, from the aridity to a fruit explosion, that’s the magic of Pouilly-Fumé… for a unique cuvee !
Grape variety: 100 % Sauvignon Blanc
Age of the vines: from 20 to 30 years
Plots: Le Désert des Fouinelles
Terroir: Kimmeridgian marls (little oyster fossils)
Vine culture: Respectful of biodiversity. HVE3 certification. Soil tillage. Disbudding. Leaf removal according to the years.
Vinification: Direct pressing of the grapes, in a pneumatic press, at low pressure. Separation of end of press juice. Thermoregulated stainless steel tanks, vinification between 14°C (57°F) and 20°C (68°F) to preserve the aromatic potential.
Aging: No malolactic fermentation to keep the freshness. 8 months on fine lees minimum. Batonnage.
Degree of alcohol 12,5
Tasting
An elegant and fresh wine. Aromas of white fruit (peach, pear), citrus, exotic fruit and minerality. The attack is supple, and the palate rich and round.
Our advices
Pour not chilled but fresh, around 10°C – 50°F. We advise you to drink it on his freshness, 3 to 5 years after its bottling.
