Byzance
Vintage 2022
Each year we celebrate one plot which represents the best of the vintage. After Miracle in 2021 and the plot of Les Bascoins Sud, this year we picked the land of Les Porcheronnes, and baptized our special cuvée Byzance for one simple reason: the harvest was simply magnificient!
A clay and limestone terroir, a great harvest, a bold vinification method, for a generous and unique Pouilly Fumé, named Byzance, in reference to the legendary opulence of Byzantium, the famous ancient city.
Grape variety: 100 % Sauvignon blanc
Age of the vines: on average 35 years old
Plots: Les Porcheronnes
Terroir: Clay-limestone (Calcaires de Villiers), chalky white soil (terres blanches) with ammonite fossils. Vine culture: Respectful of biodiversity. HVE3 certification. Soil tillage. Disbudding. Leaf removal according to the years.
Vinification: Specific methods that we keep secret. Pressing of the grapes, in a pneumatic press, at low pressure. Thermoregulated stainless steel tanks, vinification between 14°C (57°F) and 20°C (68°F) to preserve the aromatic potential.
Aging: No malolactic fermentation to keep the freshness. 12 months on fine lees minimum. Batonnage.
Degree of alcohol 12,5
Tasting
Color: pale yellow gold, with green reflections. Bright.
Nose: richness with notes of candied orange, bitter almond, and vanilla. Minerality and freshness (lime, clementine, bergamot) after aeration.
Palate: a round and supple attack of lychee and rose, an acidulous and fleshy evolution.
Finish: long and voluptuous.
Our advices
Pour not chilled but fresh, around 10°C – 50°F.
To share with Sauvignon Blanc lovers, as an aperitif with warm gougères, snacked scallops or a roasted apricot tart.
Can be drunk young, but thanks to its particular method of vinification, beautiful things await those who know how to wait more than 5 years.
Vieilles Vignes is the historical cuvée of the domaine, a blend of the grapes from our different oldest plots (on average 30 years old), and from terres blanches and caillottes terroirs.
Désert is a parcel cuvée. All the grapes come from a specific terroir full of little fossils so dry and stony which mark the identity of this cuvée.
Vent d’Anges is a special cuvée of the domaine, a selection of grapes, hand picked, chosen among the most beautiful one.
